After three years of natural aging, this wild Shoumei is burst with sweetness both in aroma and taste. The character of the sweetness resembles that of unprocessed cane sugar, clean and slightly mineralized. In addition, herbal and earthy traces in the cup give hints to the age of this Shoumei.
The aftertaste is very pleasing with lingering sensations of ripe plum. This plummy sensation even reaches the nasal cavity and slowly fades way.

Grown in an untampered environment, these wild Shoumei trees were left to grow to a height of over 3 meters (10ft) tall. This compared to tea plantation bushes that are usually under a meter (3ft) in height.
The leaves of the Shoumei came from the same trees as the wild Bai Mudan (White Peony) but were plucked later. Hence Shoumei consists of mostly leaves, which renders a stronger taste as a result.

100oC/212oF brewing temperature
